Recipe: Fancy Baked Potato

As you know, I love potatoes. I’m always looking for new and delicious ways to prepare them. When I saw these potatoes making the rounds on Pinterest, I was inspired and this recipe was born.

Domestocrat’s Fancy Baked Potato (serves 2)
2 medium white potatoes
5 cloves of garlic, thinly sliced
2 tsp. EVOO, divided
1 tbsp. butter, divided
Salt & pepper to taste

Wash each potato and carefully cut thin slices throughout without cutting all the way through the potato. If you slip up and cut through a piece it’s ok, I have it covered – keep reading.

Thinly slice the garlic as well.

I created a little tinfoil boat for each potato (to hold them together, especially if you slice all the way through by accident, and to keep all the garlic/oil/etc. inside). Insert a slice of garlic into each potato slice.

Next, drizzle each potato with 1 tsp. EVOO and sprinkle with salt and pepper.

Roast on 450 degrees for 50-60 minutes until the potatoes are browned and fork tender.

When you are ready to serve, top each potato with 1/2 tbsp. butter.

Basically these potatoes are nothing but a simple baked potato. However, I think the partial slicing and garlic slivers make it fancy.

We had these fancy baked potatoes for Easter dinner on Sunday with a Veggie & Egg Tower of Power. So good!
