Recipe: Veggie & Egg Tower of Power

I love falling down a blogosphere rabbit hole and adding a whole mess of new blogs to my Google Reader. Last week I stumbled upon My New Roots, a blog full of nutritional and healthy vegetarian recipes. The recipes, photography, and healthy theme instantly appealed to me. When I found MNR’s Veggie & Egg Tower of Power post I was sold. I made this incredibly easy and healthy dish for John and I on Easter Sunday. No guilt holiday meal? Win!

My New Roots Veggie & Egg Tower of Power (serves 2)
1 big sweet potato, sliced
1 medium red onion, sliced thin
1 cup cherry tomatoes, halved
2 handfuls fresh spinach
2 eggs
EVOO (used throughout)
Salt & pepper to taste

The steps to this recipe could not be easier.

Step 1: Wash and slice sweet potato. Toss in 1 tbsp. EVOO, sprinkle with salt and pepper. Roast on 450 degrees for about 30 minutes.

Step 2: Caramelize the onion in 1 tbsp. of EVOO over medium-high heat. Takes about 15 minutes.

Step 3: Sauté the cherry tomatoes in 1 tsp. EVOO over medium-high heat.

Step 4:
a) Make sure all of your veggies are done and ready to plate.
b) Get the eggs in a sauté pan over medium heat, start to cook when you begin to plate the veggies. Cook until you reach your preferred doneness. We like runny yolks so this took about 2-3 minutes for me.
c) Begin plating: Stack the sweet potatoes, spoon the tomatoes around the base, top the potatoes with fresh spinach, top the spinach with the caramelized onions, and top the whole thing with the egg which, at that point, will be cooked.

As I mentioned we had these Towers of Power for Easter dinner on Sunday with some fancy baked potatoes on the side.
