Recipe: Garlic Breadcrumb Pasta

Who doesn’t love a crunchy, garlicky, buttery bowl of pasta?!

Recipe: Garlic Breadcrumb Pasta (yields 4 servings, inspired by The Washington Post Bread Crumb Spaghetti recipe)
4 servings of your pasta of choice
4 tbsp. butter (plus some extra)
2 tbsp. EVOO
1/3 loaf old bread
3 garlic cloves, minced
1 tsp. oregano
Salt & pepper to taste

Start by heating the butter and oil over medium-low heat. While the butter melts, tear up the bread and process in a food pro until it’s breadcrumb sized. I left some bigger chunks too. The size is totally up to you!

When the butter has melted, add the garlic and saute until tender. Next, add the breadcrumbs, stir to coat with the butter/oil mixture, and brown over medium-low heat. If it seems at all dry, add in a bit more butter and/or oil. While the breadcrumbs are browning, make your pasta.

The mixture is done when the breadcrumbs are brown and the garlic is aromatic.

Serve up your pasta in a big bowl and add a small pat of butter on top. Toss to combine.

Add 1/4 of the garlic breadcrumb mixture on top and toss together until the crumbs are evenly distributed. That’s it! Enjoy!
