Simple Snack: Froyo Blueberries

Simple Snack #4 – Froyo Blueberries

This simple snack is both simple and satisfying, yes – but it’s also just plain good. To make it you’ll need one 6 oz. container of blueberries, one 5.3 oz cup of vanilla yogurt (I used Wallaby’s Organic Greek Vanilla Bean Yogurt here), and two toothpicks.

Rinse the blueberries. Insert the toothpick into one and fully submerge it into the yogurt.

When the blueberry is completely covered, lightly tap off the excess yogurt back into the cup. With the help of the second toothpick, move the blueberry off of the first toothpick and on to a parchment paper lined baking sheet.

Repeat this process for each blueberry. Yes, it’s time consuming but it’s well worth it. I would recommend just dumping the blueberries into the yogurt cup because you won’t get full coverage on the blueberries. Put the entire baking sheet into the freezer for 5 hours.

When the yogurt and blueberries have frozen solid, you can eat them right then and there or…

…put into a ziplock bag and store in the freezer for a few weeks.

This snack is perfect for adults and kids alike. It also is a great way to satisfy a craving for ice cream. Enjoy!
