Recipe: Flourless Chocolate Oat Walnut Cookies

You know what’s awesome? Riffing on your own recipe and having total success. I did a little improvising with my original recipe for flourless chocolate coconut cookies and came up with this new recipe that features oats and walnuts instead. Such a winning combination.

Flourless Chocolate Oat Walnut Cookies (makes 24 cookies)
3 cups confectioners sugar
1 cup cocoa powder (Dutch process, I love Ghiradelli for this)
1/2 tsp. salt
1 cup walnuts
1 cup oats
4 egg whites

Mix everything up in your trusty stand mixer or just a big bowl.

Make sure the ingredients are thoroughly combined. Scoop with a spoon or small disher (I use my handy dandy #20 ice cream scooper) onto a parchment paper lined baking sheet.

Bake on 325 degrees for 15 minutes, rotating the pan once midway during the baking process. When they are done they may look gooey in the middle still but that’s ok. Actually, that’s more than ok.
