Recipe: All Hail Kale Caesar Salad

I wasn’t joking when I said that massaged kale is the greatest thing since sliced bread. I have made this massaged kale caesar a dozen times already and it’s my favorite. The tender kale leaves are perfect for this salad: they really stand up to the cheese and croutons, and make the perfect hearty casesar.

All Hail Kale Caesar Salad (makes 2 side salads)
2 cups raw kale, trimmed and cut into bit sized pieces
1/2 tbsp. EVOO
1/2 cup freshly grated parmesan cheese
1 cup croutons (your preference, I like fresh sourdough)
2 tbsp. caesar salad dressing

Super easy instructions:
1) Massage the kale according to my directions.
2) Dress the kale as you would a caesar salad. My favorite method is to get a big bowl, place all of the ingredients inside, toss with tongs, then serve dressed and ready to go.
3) Divide and serve in two salad bowls.
4) Enjoy!
