Recipe: Dirty Rice with Sausage

This recipe is my go-to when I want to make something healthy and quick. It’s simple but fresh and full of flavor.

Domestocrat’s Dirty Rice with Sausage (yields 6 portions)
5 pork sausages (roughly 2 lbs.)
4 cups brown rice (cooked in 12 cups of water, I like a 3:1 ratio)
2 red peppers, chopped
1 yellow pepper, chopped
1 green pepper, chopped
2 yellow onions, chopped
2 tbsp. minced garlic
1 28oz. can of diced tomatoes
1 15oz. can of corn
1 15oz. can of kidney beans
2 tsp. red pepper flake
3 tsp. cajun seasoning
Salt & pepper to taste

To begin, cook 4 cups of brown rice in a large pot over medium-high heat.

In a separate large pot, brown the sausages over medium heat. When they have a deep brown crust, transfer them to a 350 degree oven for 15 minutes to finish cooking.

While the sausages are browning, chop the peppers and onions into small pieces. When the sausages are done browning and in the oven, sauté the onions, peppers, and EVOO in the same pot used for the sausages for about 7-9 minutes.

Once the vegetables have softened and start to brown, add the spices, tomatoes, corn, garlic, and beans.

Stir to combine and cook over medium heat for another 15 minutes.

When the vegetables and beans are done cooking, and in the rice and stir thoroughly. Taste for seasoning and adjust as needed.

Slice the sausages and serve over the top. See? Healthy, yummy, and quick!
