I love a breakfast smoothie but quickly tire of the same old flavors. I recently made this version to shake up (no pun intended) the old smoothie routine. It worked! I couldn’t even taste the tofu, protein powder, or almond milk. Just smooth, delicious peanut butter and chocolate goodness. The agave added the perfect hint of sweetness without being too sweet for breakfast. I’ll definitely be making this one again very soon,
Domestocrat’s Peanut Butter Chocolate Protein Smoothie (yields one smoothie)
3 tbsp. plain yogurt
1 tbsp. peanut butter
1 tbsp. cocoa powder
1/4 cup tofu, cubed
1/4 cup almond milk
1 tsp. chia seed
1 tsp. ground flax seed
1 tbsp. protein powder
2 tsp. agave syrup
3-6 ice cubes
Add all of the ingredients to a medium sized (12 oz.) mason jar. Top with the almond milk and ice.
A mason jar will fit perfectly on your blender with the blender blade attachment. Simply screw it on to the bottom of the jar exactly how you would with the full sized blender container. It couldn’t be simpler. I used a 12 oz. mason jar here but I think any size (except wide mouthed jars) will work here.
This recipe is perfect to drink right after it’s blended or to make ahead for the next day. The mason jar is a handy way to have a delicious and nutritious smoothie when you’re on the go.
I never knew that about mason jars… and also never heard of smoothies with tofu in them. I feel so educated today, and plan on trying this out for my toddler later in the week.
