Trader Joe’s came out with their Organic Virgin Coconut Oil a while ago and, like so many of their products, it quietly boomed into popularity. Some coconut oils are made with high heat and chemicals but TJ’s is cold pressed to keep the oil nutritious and delicious.
The saturated fats in coconut oil aid in the absorption of vitamins, minerals and amino acids, and also have antibacterial properties that help digestion. It can also stand up to pretty high heat so it’s a very versatile cooking oil. The flavor is quite subtle – not overwhelming or coconutty at all (think of how olive oil has just the slightest hint of olives).
So how can you use it? Here are some of my favorite applications:
- Cooking – stir fries, homemade dressings and marinades, panfried meat, homemade popcorn, any baked good (muffins, quickbreads, etc.)
- Other Food Usages – homemade peanut butter, use in place of shortening in biscuits/pie, DIY Magic Shell, grease baking dishes with it
- Season your cast iron pans with it
- Moisturize dry skin, lips, and hair
- Mix with baking soda or oatmeal for a facial scrub
- DIY Vapor Rub
