This weekend I made another simple variation on my Oatmeal Anything Cookies. The simple addition of M&Ms and espresso powder resulted in, yet another, fabulous version. The pictures are brief because cookies are not all that complicated. Also, I shot this blog with my nifty fifty lens which adds a soft whimsy to the photographs. That’s kind of how I feel about cookies in general so it fits.
Domestocrat’s Oatmeal M&M Cookies
2 sticks unsalted butter, at room temperature
1 cup brown sugar
1 cup granulated sugar
2 eggs
2 tsp. pure vanilla extract
1.5 cups AP flour
1 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. kosher salt
3 cups old-fashioned oatmeal
1/2 tsp. espresso powder
1.5 cups M&Ms
Who doesn’t like M&Ms?
Delicious, fluffy, oat-filled batter.
Another of my favorite things in the world: cookie dough.
Cookies get baked at 350 degrees on a parchment paper lined baking sheet for 15 minutes.
The result is chewy, slightly crispy cookies with a lovely oat aroma and special bite of chocolate inside.
