Restaurant Recreation: Torchy’s Tacos Washingtonian

You may remember my brief trip to Austin, TX in early September for a work conference. Since then I’ve been thinking nonstop about recreating the amazing soft taco (“The Washingtonian”) I had from Torchy’s Tacos. I do love a good restaurant recreation. Last weekend we got all the ingredients together and made them at home!

I feel silly writing up a recipe for this recreation because it’s essentially a few ingredients in whatever quantities you prefer. The main ingredients here are tortillas, pulled pork, pickles, cheese, caramelized onions, lettuce, and sour cream. There are so many ways to make this your own. For example, we used pepper jack cheese instead of the milder jack used at Torchy’s. We also used greek yogurt instead of sour cream (our go-to swap).


I piled my tacos high with pork and lettuce, went a little less on the greek yogurt and cheese.


Obviously the tacos from Torchy’s were way better because they were a greasy indulgence but my at-home, healthier recreation will definitely do in a pinch (or instead of a flight to Texas).
