Recipe: Chocolate Bark

Lately I’ve been pining away for chocolate bark. There have been of ton of interesting recipes recently circulating the blogosphere, I think because of Easter. This one really got my mouth watering. So I set off to make my own.

Kim’s Chocolate Bark
35 oz. of chocolate (I used half dark, half milk chocolate – thank you Trader Joe’s for these mega pound plus bars!)
8 tbsp. salted butter
1.5 cups salted peanuts, roughly chopped
2.5 oz white chocolate

Will yield a large serving, think party-sized quantity

Prep your ingredients so they are ready to go: cut up your chocolate so it’s smaller and easier to melt and chop your peanuts.

Get your double boiler going:

Add a few pieces of chocolate and all of the butter to start. As the chocolate and butter melt together, continually stir. Keep adding your chocolate in until it’s all melted into a smooth mixture.

When your chocolate is totally melted add your chopped peanuts and mix in thoroughly.

Next, line a baking sheet with parchment paper:

Drop your mixture in the middle and smooth out to the edges in one uniform layer.

The final step is to add a little flair to the top. Melt your white chocolate (in the microwave is fine for this small amount). Drizzle over the top and decorate in whatever pattern you like.

Pop your chocolate into the freezer for 2-3 hours. It needs at least an hour to set up and freeze into a solid block but 2-3 hours is optimal.

When you remove your chocolate cut into pieces or break up with your hands. I did a combination of both.

And voila, chocolate bark!!!
