Recipe: Chocolate Chip Blondies

I already made muesli bars with our new Kitchen Aid stand mixer. But it didn’t count. So I’m calling this recipe the inaugural treat made by our lovely new mixer.

This recipe is quick, easy, pantry friendly, and delicious. Just make it. Even if you don’t have a stand mixer. Go on now.

Chocolate Chip Blondies
2 cups flour
1.5 teaspoon baking powder
1/2 teaspoon salt
1.5 sticks of unsalted butter, softened/melted and cooled
1.25 cups packed brown sugar
2 eggs
2 teaspoons vanilla
1 whole bag of the most delicious chocolate chips you can find  (I used Guittard milk chocolate chips)

Heavenly Guittard chocolate chips:

Mix all of your dry ingredients together:

Then add in all of your wet ingredients:

Lastly, get your chocolate chips in there:

Scoop your batter from your mixer’s bowl into a greased 13×9 glass bakeware dish. Bake on 350 degrees for 20 minutes. Make sure to rotate once at the 10 minute mark.

Wait for them to cool completely before you cut them. I know, it’s awful but trust me these will fall apart if you don’t. I let them sit on the counter overnight and they sliced up so easily in the morning.

They came out moist, sweet, a little crispy on the edges, and perfectly chocolatey.
